City-Grown in Leuven

Fresh greens grown inside the city, harvested for the same day they are sold.

Urban Glasshouse is a network of vertical, controlled-environment greenhouses built into the heart of the city. We cultivate leafy greens, tender herbs, edible flowers and vine-ripened tomatoes just minutes from the markets, grocers and restaurant kitchens that depend on them. By shortening the distance between the growing rack and the plate, we deliver produce that keeps its crispness, colour and aroma instead of losing them to long-haul transport and days in cold storage.

Our approach pairs precise climate control with a genuinely local supply rhythm. Water is recirculated, growing seasons run year-round, and every crate is traceable back to the exact tier and cycle it was grown in. Whether you run a busy bistro, a neighbourhood grocery, or a market stall, we make it simple to serve produce that was alive this morning and vibrant on the plate tonight.

Why Growers & Buyers Choose Us

Six reasons a city greenhouse beats the long supply chain.

We built our model around the two things professional buyers care about most: freshness that lasts through service, and supply they can plan around with confidence all year long.

Tomatoes and greens harvested inside the urban greenhouse

Harvested Fresh, Every Single Day

Because our greenhouses sit inside the city rather than in distant fields, the gap between cutting a crop and delivering it is measured in hours, not days. Leaves are picked at their structural peak, packed immediately, and moved to nearby kitchens and market stalls while the plant tissue is still turgid and aromatic. That short journey preserves crunch, colour and shelf life, which means less spoilage for buyers and produce that still looks vibrant after a full service. For chefs and grocers who have grown used to greens that wilt within a day of delivery, the difference in longevity and flavour is immediate, obvious and consistently repeatable across the entire week.

A Reliable Harvest in Every Season

Traditional field supply rises and falls with weather, frost and rainfall, leaving buyers scrambling when crops fail or prices spike. Inside our controlled greenhouses, light, temperature, humidity and nutrients are tuned continuously, so production stays steady through the depths of a Belgian winter and the heat of midsummer alike. This predictability lets restaurants lock in menus and lets grocers plan promotions without fear of a sudden gap on the shelf. Standing orders are honoured week after week, and new partners can scale their volumes gradually, confident that the greens they build their offer around will still be growing and available regardless of what the sky is doing outside.

Grown With Far Less Water and Land

Our vertical growing systems recirculate water in closed loops, capturing what plants do not drink and returning it to the cycle rather than letting it drain away. Stacking crops on tiers means a single urban footprint produces what would otherwise require many times the horizontal field space. There are no run-off issues, minimal transport emissions, and dramatically reduced water demand compared with conventional cultivation. For partners who want to tell a credible sustainability story to their own customers, this efficiency is genuine and measurable rather than decorative. It also protects supply against drought and land pressure, keeping prices stable while shrinking the environmental cost attached to every leaf, herb and tomato we grow.

Consistent Quality You Can Standardise On

Kitchens and retailers depend on uniformity: the same leaf size, the same colour, the same weight per bunch, order after order. Because we control the growing environment down to fine tolerances, our crops arrive with remarkable consistency rather than the variability that comes with open-field farming. That reliability makes plating faster, portioning more accurate and pricing easier to hold. Buyers can standardise recipes and shelf displays around a known specification, confident that this week's delivery will match last week's. When something does need adjusting, we can fine-tune a growing cycle deliberately, giving partners a level of quality control that simply is not possible when produce passes through several intermediaries before it arrives.

Fully Traceable, Genuinely Local

Every crate we send out can be traced back to the exact greenhouse tier, growing cycle and harvest day it came from. There is no anonymous supply chain, no imported filler, and no uncertainty about where the produce originated. For restaurants and grocers who want to reassure their guests and shoppers, this transparency turns provenance into a real selling point rather than a vague claim. Local sourcing here means the crop was grown a short distance away by a team you can visit and speak to, not shipped across borders and relabelled. That closeness builds trust on both sides and keeps the relationship between grower and buyer direct, accountable and easy to verify.

Flexible Partnerships That Fit Your Format

No two buyers work the same way, so we shape supply around each partner instead of forcing everyone into one wholesale mould. A fine-dining kitchen might need small, precise weekly allocations of micro-herbs and edible flowers, while a busy grocer needs steady volumes of salad leaves and vine tomatoes. We accommodate both, adjusting pack sizes, delivery frequency and crop selection to match real operational needs. As a partnership grows, capacity can be reserved in advance and specific varieties grown to order. This flexibility means small independents and larger operators alike get a supply arrangement that genuinely suits their format, rather than a rigid catalogue that ignores how their business actually runs day to day.

What We Supply

Produce, delivery and planning built for professional buyers.

From leafy greens and vine tomatoes to standing delivery routes and contract growing, each service is designed around how markets, grocers and kitchens actually operate.

Fresh Leafy Greens & Micro-Herbs

Our core supply is a rotating range of salad leaves, tender cooking greens, cutting herbs, micro-greens and edible flowers, all grown in clean, controlled conditions and cut to order. Lettuces, rocket, spinach, basil, coriander, chives and delicate garnishes leave the greenhouse the same day they are harvested, keeping structure and aroma intact through service. Kitchens receive greens that plate cleanly and hold their form, while grocers get leaves that stay presentable on the shelf far longer than field-trucked produce. Because varieties are chosen for flavour and performance rather than shipping durability, buyers can offer a livelier, more expressive range than conventional wholesale allows, backed by dependable weekly availability.

Vine Tomatoes & Fruiting-Crop Programmes

Beyond greens, we run dedicated growing programmes for vine-ripened tomatoes, cucumbers, peppers and other fruiting crops that reward careful climate control with concentrated flavour. Fruit is allowed to develop on the plant rather than being picked green for transit, so it reaches partners sweet, fragrant and properly coloured. We can grow specific cultivars on request, from cherry and cocktail tomatoes for garnish to fuller varieties for sauces and salads. Volumes are planned in advance so restaurants and retailers can feature these crops confidently across a season. The result is fruiting produce with the depth of flavour customers notice immediately, delivered on a schedule reliable enough to build a menu or a display around.

Standing Delivery Routes for Restaurants

For kitchens that want predictable supply instead of last-minute scrambling, we operate standing delivery routes tuned to each restaurant's rhythm. Orders are agreed in advance, packed to specification, and dropped on a fixed schedule that fits prep timing and service days. Because the greenhouse is close by, we can flex volumes for busy weekends or special events without the lead times a distant supplier would demand. Chefs receive produce cut that morning, packed for immediate use, with clear labelling for fast receiving and rotation. This turns herb and green procurement into a calm, structured part of the week rather than a recurring worry, freeing kitchen teams to focus on cooking rather than chasing deliveries.

Wholesale Supply for Markets & Grocers

Independent grocers, market stalls and neighbourhood shops rely on us for steady volumes of fresh, locally grown produce that moves quickly and looks its best on display. We supply in practical wholesale quantities with consistent grading, so retailers can price and present with confidence. The short distance from greenhouse to shelf means longer saleable life, less shrink and fewer markdowns, protecting margins on perishable stock. Because our provenance is genuinely local and fully traceable, retailers can promote the produce as city-grown to shoppers who increasingly want to know where their food comes from. We coordinate delivery timing around opening hours and restock needs, keeping shelves full of vibrant greens without leaving grocers overstocked or exposed to waste.

Seasonal Menu & Crop-Planning Advice

Choosing what to grow and what to feature is easier with a grower at the table. We work directly with chefs and buyers to plan crops around upcoming menus, promotions and seasonal moments, matching varieties and volumes to real demand. Rather than abstract trend talk, this is practical guidance grounded in what we can cultivate, when it will be ready, and how it performs in the kitchen or on the shelf. Partners can reserve growing capacity ahead of a menu change, trial new leaves before committing, and time launches to peak availability. This collaboration reduces mismatches between concept and supply, and helps buyers bring more intentional, distinctive produce into their offer with confidence.

Custom & Contract Cultivation

When a partner needs something specific, we can dedicate growing capacity to their requirements through contract cultivation. This suits restaurants developing a signature dish, retailers wanting an exclusive line, or caterers with recurring event needs that demand particular varieties, sizes or volumes. We agree the specification, reserve the necessary tiers, and grow to order on an ongoing basis, giving the partner priority access to a crop shaped precisely around their brief. Because production is planned rather than opportunistic, quality and quantity stay dependable across the contract. It is the closest a buyer can get to having their own greenhouse without the capital, labour or expertise required to run one, all delivered with the traceability and freshness of local growing.

Interior of the urban greenhouse with tiered growing systems
Our Story

A greenhouse in the middle of the city, feeding the streets around it.

Urban Glasshouse began with a simple frustration: the freshest-looking greens in the city had often travelled for days before reaching a plate or a shelf. We believed the answer was to move the farm to where the food is eaten. So we built tiered, controlled-environment greenhouses inside the urban core, close enough to walk produce to many of the kitchens and markets we serve, and set out to prove that a small footprint could feed a neighbourhood.

Today our team manages the whole cycle under one roof: choosing varieties for flavour and performance, tuning light and climate, hand-harvesting at peak, and packing for immediate delivery. Water runs in closed loops, crops grow year-round, and nothing sits in long-haul transit. That control lets us hand buyers produce that is not only fresher but more consistent, more traceable and grown with a fraction of the water and land that field farming demands.

What matters most to us is the relationship on the other side of the crate. We work alongside chefs, grocers and market traders as partners rather than a faceless supplier, planning crops together, adapting to how each business runs, and standing behind every delivery. Rooted in the city we serve, we want the greens people buy here to have grown here, close enough that the person who grew them can tell you exactly how they did it.
